KANGKUNG IN BEEF

 

½ lb.           Beef cut into matchstick shreds

1 lb.            Kangkung broken into big pieces

1 tsp.          Sugar

2-½ tbsp.    Soya sauce

1 medium onion sliced

2 tsp.         Pepper

1 tsp.          Salt

4 tbsp.       Vegetable oil

1 tbsp.       Margarine

2-3 tbsp.   Chicken Stock

1 tbsp.       Red wine (optional)

2 cloves garlic chopped

1 slice ginger chopped

 

Prepare the beef and marinade in ginger, garlic, sugar, Soya sauce, and 1 tbsp. oil mixture for 15 minutes. Heat the 3-tbsp. oil in a wok. When hot add the beef and stir-fry for a few minutes in high heat. Remove the beef from the pan and set aside. Add the margarine to the same pan and stir-fry the kangkung. Sprinkle the salt pepper onion and broth over the kangkung. Turn the kangkung a couple of times and then add the beef. Stir-fry for a few minutes and serve.
